This is oyaki, a rustic dish from Nagano Prefecture. Similar to a Japanese savory dumpling, it features a chewy, elastic dough. The filling uses three types of Shinshu (Nagano) grown mushrooms (king oyster, maitake, and buna-shimeji) seasoned with local, traditionally brewed wooden-vat miso. A dash of shichimi seven-spice blend from Yawataya Isogoro, a historic Nagano brand, adds a pleasant spicy kick. It is shelf-stable, and heating it in a microwave enhances its aromatic flavor.
