This concentrated soup offers a creamy, mellow flavor with a base of roasted sesame and soy milk. The nutty aroma and gentle sweetness make it one of the most popular hot pot choices in Japan. The name refers to the Japanese tradition of “Shime,” where rice or noodles are added to the savory leftover broth to finish the meal.
