Japanese Konbini store, FamilyMart, is launching new products in collaboration with Chef Kinya Komoda, a renowned master of Szechuan cuisine. For this seventh installment in the series, a winter classic, “Chukaman” (steamed buns), and an authentic “Black Vinegar Sweet and Sour Pork” will be introduced, capturing the attention of foodies all over Japan.

Chef Komoda is a true specialist in Szechuan cuisine, serving as the head chef of the creative Chinese restaurant “4000 Chinese Restaurant” and the owner-chef of the popular hot pot restaurant “Fire Hall 4000.” The collaboration with FamilyMart began in 2023, and its authentic flavors have captivated many fans. The series boasts immense popularity, with total sales exceeding an incredible 4 million units. And now, long-awaited new items are being added to this hugely popular series.

A Fusion of Numbing Spice and Cheese! The “Mala Cheese Meat Bun”

First up is the series’ first-ever Chukaman (steamed bun), the “Mala Cheese Meat Bun.” Chukaman are a quintessential warm snack, indispensable during the Japanese winter. Many Konbini offer them piping hot from dedicated cases next to the cash register.

This “Mala Cheese Meat Bun” is no ordinary Chukaman. Its greatest feature is the combination of “mala,” the tongue-numbing spiciness characteristic of Szechuan cuisine, and gooey, melted cheese. The mellow richness of the cheese is added to the stimulating spiciness, creating an exquisite harmony.

Furthermore, by using Japanese-style dashi and koji miso as secret ingredients, it achieves a deep, complex flavor that’s not just about the heat but also has a solid umami foundation. The slightly sweet and chewy dough further enhances the spiciness of the filling, making it an addictive treat you won’t be able to resist after just one bite.

Chef Komoda says, “While centering on the ‘mala’ stimulus of Szechuan cuisine, I aimed for a flavor you won’t get tired of by layering the richness of cheese and the umami of Japanese dashi.”

This special Chukaman will be available in limited quantities starting from Tuesday, January 6, 2026, for 184 yen (198 yen including tax) at FamilyMart stores all over Japan.

Next up is the classic Chinese dish, “Black Vinegar Sweet and Sour Pork.” In Japanese Konbini, in addition to bento boxes, the selection of such packaged sozai (prepared dishes) is also very extensive, making it easy to enjoy an authentic meal at home.

This “Black Vinegar Sweet and Sour Pork” uses tender pork thigh. The crucial black vinegar sauce is a testament to their dedication, featuring a blend of Chinese Zhenjiang vinegar, Laojiu (aged Chinese soy sauce), and even grape juice.

According to Chef Komoda, “I’m particular about the vinegar blend and the cooking process to ensure that the sourness of the black vinegar isn’t too overpowering, allowing the fruitiness and richness to spread naturally.” True to his word, the dish features an authentic taste that is not just sour but also has a palpable richness and depth.

The release date is Tuesday, January 13, 2026, and the price is 397 yen (428 yen including tax). This will also be available at FamilyMart stores all over Japan, but please note that in Okinawa Prefecture only, it will go on sale from Tuesday, January 20.
