A traditional Japanese rice ball made from “okowa”—glutinous sweet rice steamed in a wooden basket. It has a delightfully chewy and sticky texture that is much more elastic than standard rice. Packed with finely chopped carrots, bamboo shoots, and savory barbecued pork, it is seasoned with soy sauce and oyster sauce for a rich, Chinese-style umami flavor. It remains soft and chewy even when cold, making it delicious at room temperature, but heating it makes it incredibly fluffy and fresh-out-of-the-steamer.
