Supervised by the popular Naha-based restaurant Kame Kame Soba, this dish brings the unique flavors of Okinawa Soba to you. Unlike traditional Japanese buckwheat noodles, these are wavy, non-fried wheat noodles. The light yet savory broth combines a skipjack tuna (bonito) dashi base with rich pork notes. Toppings include savory pork-style chips, kamaboko (fish cake), green onions, and pickled red ginger. Originally developed for a Japanese TV program, each cup weighs 88g (3.1 oz) with 70g (2.47 oz) of noodles.
