A classic udon originating from the Kyushu region of western Japan. In Kyushu, chicken is locally referred to as “kashiwa,” and this dish is topped with tender chicken simmered in a sweet and savory soy glaze. The flavorful broth blends seafood dashi with the signature sweet soy sauce of Kyushu. A packet of ichimi togarashi (ground red chili pepper) is included so you can adjust the heat to your liking.
