Chilled udon noodles inspired by the regional dish of Fujiyoshida in Yamanashi Prefecture, located near Mt. Fuji. These noodles are known for being exceptionally firm and chewy, offering a much tougher texture than standard udon. It is topped with traditionally used horse meat and refreshing grated radish. The broth is a unique blend of miso and soy sauce. Simply pour the broth over the noodles to loosen them before eating.
